I have had success hunting superheavies with dreadnoughts in drop pods and Thunder Hammer/Storm Shield Terminators. However, I feel we have better options available to us:
Dreadnoughts in Lucius pattern drop pods (Imperial Armor Apocalypse II). You can assault out of them, so drop inside the shields, shoot and charge.
Purifiers with hammers. Cheap (in apocalypse terms), and many strength 10 attacks. Use either drop pods or some kind of strategy like forced march to get them into position. A librarian wouldn't hurt for shrouding and sanctuary.
I would't go close to Paladins in Apocalypse, since there are so many strength D weapons out there and many of them are AP 1 or 2, just begging for instant death.

Warbiker nobz, thunder hammers and power fists on cheap units, and some good ol' lascannons is the shit for taking down titans.
They are large targets (wheeew, tell me about it, Ignis base is 2 feet wide) so get in and pound with alot of high strength attacks.
The more the better, titans have notoriously low Ws, so they are easy to hit.
Perhaps bring a vortex grenade around to punch in some extra hurt.
I would despise such tactics, and demand proper enemies (superheavy and gargantuan)

Dreadknights will get instant-killed by destroyer weapons, which any titan worth taking will be festooned with. Let's look at the points:
Plain dreadknight with hammer is 140 points. That's equivalent to a squad of 5 purifiers with 4 hammers. Let's say they make it into assault and pass their psychic check for hammerhand against a warhound:
Purifiers will get 12 attacks at strength 10. Hitting on 3's, that makes 8 hits. Strength 10 vs. Armor 14 says roughly 2 pens and 2 glances.
The dreadknight will have 4 attacks, 3 hits and strength 10+2d6 says 3 penetrating hits.
The 5th ed assault rules makes it hard to damage titans in combat, even how large they are they count as walkers so you swing on the front armor. It's much better to engage them at mid-short range against the rear armor. Purifiers with multiple psycannons spring to mind here.

Only the weaker titans have a lower rear armour though.
And multiple structure points will still be a problem.
And you will have to get REALLY close, otherwise they will just be protected by their void shields.
Which regenerate every turn. (on 5+)

Don't jump infantry still get to attack the facing they are on when fighting superheavy walkers? This would mean that Interceptors and PTDKs with hammers would be your Titan hunters of choice.

I've got a game of apocalypse next weekend, and will be taking my grey knights(draigowing, 6 psyrifle dreads and a couple of other squads) along with my IG Leafblower list with a shadowsword and a malcador infernus,
and I was thinking about taking along a brotherhood champion, with the intention of getting him into combat with a titan or something else big and killy and then hoping that he gets killed and drags the enemy with him, I haven't got my codex with me at the moment(so hes special rules might not affect be able to affect a vehicle aka titan) but to me this seems to be a easy way to kill titans,
and theres nothing saying you can only take one brotherhood champion....

Superheavies and gargantuan creatures are immune to instant death effects.
Any and all effects that would instantly kill it does D3 and respectively D6 wounds/structure points.

but if i remember correctly (I'll check this evening) it doesn't say instant death it just says "removed from play" or words to that effect therefore it isn't instant death,

It says remove from play but the rules weren't written with titans in mind. A structure point sounds fair.
