Historical Armour Fluff
I have been searching for older fluff on our noble order.
I was mostly inspired by Inquisitor Lords recent undertaking of painting his GKs black (very nice work )
So far all I have found is this from Wikipedia:

Aegis Armour:
The suits of power and Terminator armour worn by the Grey Knights are incredibly well crafted; anointed and inscribed with prayers and wards, ritually consecrated and psychically charged. Working in tandem with the Grey Knights' formidable psychic powers, the Aegis Armour protects the wearers from the effects of the Immaterium and the Daemons it spawns. The armour's ritual blessings and psychic resonance also serve to confound the perception of any enemy, resulting in an effect called the Shrouding.
As well as its psychic properties, the armour itself incorporates a Stormbolter which, when combined with the skill of the Knights themselves, can be used with equal effectiveness in both ranged and melee combat. When circumstances dictate, the weapon can be loaded with force-touched ammunition.

I can't go into technical details about this, but why do the grey knights have sets of armour that look so different from other marines? I know that it is a different mark, but still?

Although having the base power armor stats, the GK Aegis suits are anointed and have hexagrammic wards worked into them. This sets them aside against normal power armor and is most likely why they look a bit different. The dex also states that the suits are baroque and archaic so they should look older and a little more extravagant.

Why have normal boring power armour when you can have shiny armour of holy strength, crafted by master artisans centuries ago (or more)
Plus coolness factor.
Normal marines may be cool, but knights are cooler.

I think the GK were just sick of everyone allways asking them:"Are you an Ultramarine?",so they maybe theyr armour one of those easely identified ones.
Or they just wanted to be specia on all levels so they wanted even theyr armour to be special.

Wiki isn't always that accurate unfortunately.
But most of thats pretty correct. There is alot more to GK's than people who don't collect them understand.
