Hello all!
I started wargaming about 7 years ago with Warmachine. I've had an off-and-on again relationship with it. It's a fantastic game and I love it, but I've always wanted to dip my foot in the big granddaddy of miniature wargaming that is 40K.
I love the look of Grey Knights, particularly the Dreadknight. I think it's the coolest looking model in GW's stable, hands down. Here's the thing, I know virtually nothing about 40K. I've ordered the core rulebook and GW codex, but haven't got them yet. I can't seem to contain myself, though.
I've been browsing other players' lists, but none quite suit me. I hate to ask this, but would any of you mind giving a newbie a hand? I don't even know what point cost I should be looking to achieve. Is 1500 about average for casual gaming? Are allies recommended, and if so, who should I be looking at?
Lastly, any tips for putting together a list that includes Dreadknights and optionally a Stormraven or two? Should I be looking at named champions, or should I stick with unnamed? I'm obviously not going to be getting into tournaments any time soon, and I want a fun list, but having someone wipe the floor with me repeatedly stops being fun after a while if you know what I mean.

Welcome brother! Keep browsing the lists on here. And think about the style of play you want. Dread knights and Storm ravens are fun, but do you want henchmen, terminators, or power armour troops? Are you going for competitive lists or fluffy?
The more thought you give this the more help your brothers here can offer.

I want a fun list that won't be completely inept. So something safely in the middle between competitive and fluffy, I suppose.
I kind of like the idea of a mix of power armor troops and terminators, but I don't know if they play well together or not. I like variety. Regarding henchmen, I'm not at all sure what they are. I'll have to wait for my Codex I suppose.

Welcome to the forums Scraphound
A mix of power armor troops and terminators actually work very well together. And achieving a fun list that's decently competitive is easy with our codex.
Like Constantine said, once you've had a chance to peruse the GK codex as well as understand the basic rules, you'll have a better idea of how your list will be.

as our brothers allready mentioned. with the codex at hand you will have a better idea of what to build and whats gonna be fun. the codex got some nice options and various playstyles. it wont let you get bored soon.

The GK codex offers a huge variety of choice from Henchmen through to Terminators, as long as you aren't going throat slitting competitive you can't go wrong if you follow the general advice in this forum and ask the guys for some pointers.

Best start you can do is get 10+ Power Armored Grey Knights, and magnetize their arms. They can be Purifiers, Grey Knight Strike Squads, Interceptors (if you mangetize the backpack too), and Purgations. Lots of versatility with minimal monetary investment.
As far as Dreadknights are concerned, they tend to work best in pairs from what I've seen. One dies too quickly, whereas two double the thread and double the durability.
Dreadknights have a number of options. They're pretty cost-effective when left barebones, but that wouldn't be fun at all. A lot of people upgrade them to have the Personal Teleporter and Incinerator for an Alpha Strike list. Mordrak comes to mind for a lot of GK Alpha Strike lists.

Get the models you love the most.
If you wanted 3 Dreadknights and 2 Stormravens @ 1500pts you might want to run henchmen.
This would be fun to play and you would have points to spare:

3 x Dreadknight (heavy incinerator)

Welcome to the forum! As all others said, this army gives you a lot to work with, so start with what's apealing and grow from there.
